
Japanese Cocktails in NYC
A highball is not a weak drink, it is a different one. Carbonation carries aroma to the nose faster than a neat pour does, which is why a whisky that reads as flat at room temperature can open up over ice and soda. Most of what we build here works on that principle, using shochu, sake, umeshu and Japanese whisky rather than treating them as substitutes for gin.
