The Koji-Muro: The Room Where Shochu Is Actually Decided

Ask about shochu and you get told about the ingredient. Ask a distiller and you get told about the koji.

The koji is made in a room called the koji-muro, and it is the least glamorous part of the process. It is hot, it is wet, it has no windows, and there is nothing in it to look at. It is also the step that decides most of what ends up in your glass.

What the Room Is

A koji-muro is a sealed room built to hold a climate: roughly 32 to 38 degrees, at 60 to 70 percent humidity. Traditionally lined with cedar, because wood buffers moisture in a way tile and steel do not.

That is not a comfortable place to work. It is roughly a sauna you have to do careful manual labour in, several times a day, for two days.

What Actually Happens In It

Rice or barley is steamed, then carried in. That step has its own name, hikikomi, which tells you how formalised this is.

The grain is spread out and left a couple of hours to even out in temperature and moisture, because koji spores landing on a patchy bed give you a patchy result. Then comes tanekiri: the spores are sifted over the grain by hand, and the bed is turned and mixed so every grain gets some. That turning is tokomomi.

Then the mould goes to work, and the problem changes. Koji generates its own heat as it grows. Left alone in a room already at body temperature, a deep bed of grain will cook itself and the mould dies. So the koji is turned, broken up, spread thinner, piled into smaller heaps, and turned again, through the night, to bleed heat off at the rate it is being produced.

Around 48 hours after it went in, it comes out. That is dekoji, and the grain is now furred, fragrant and warm, and it will convert starch into sugar for the ferment that follows.

Why Shochu's Room Is Different

Sake is made with yellow koji in the cool of winter. Shochu is largely made in Kyushu and Okinawa, where it is neither cool nor dry, and a wild ferment in that climate is a spoiled ferment.

Black koji solved it, and it solved it chemically rather than mechanically. It throws large amounts of citric acid, which drops the pH of the mash far enough that spoilage organisms cannot get established. That acidity is the reason shochu can be made at all in a subtropical summer, and it is also the reason it tastes the way it does.

White koji, a mutation of the black found in the early twentieth century, converts starch more efficiently and is considerably easier to handle, which is why most of the industry moved to it. If you want the full breakdown of the three colours, it is in our guide to reading a shochu label.

The practical point for the room is that the mould you are growing changes what the room has to do. Different colours want different temperature curves, and a distillery that switches koji is not just swapping an ingredient.

The Machines, and Why They Are Not a Scandal

Most honkaku shochu koji today is not made by hand on a cedar floor. It is made in a machine.

There are a few designs. Some blow conditioned air up through the bed from underneath, some across the surface, and some are horizontal rotating drums that tumble the grain while pushing temperature and humidity controlled air through it.

It is tempting to read that as the cheap modern version of a noble old craft. I do not think that is right, and I say this as someone who likes the old way. Look again at what the job is: hold a bed of grain at a moving target temperature, evenly, for two days, while it fights you by generating its own heat. That is a control problem. A drum that never sleeps and never guesses is genuinely good at it, and consistency in koji is not a small thing when the alternative is a bad tank.

What the hand method gives you is not precision. It is unevenness, and the willingness to make judgement calls a program would not. Some distilleries want that. Most want the tank to come out the same as last time.

Why Any of This Matters at the Bar

Because it explains the thing people find confusing about shochu, which is that two bottles made from the same sweet potato, in the same prefecture, in the same year, can taste like different drinks.

The potato is the same. The still might be the same. What happened in that room was not.

If you want to taste the koji rather than the ingredient, ask for something made with black koji next to something made with white, from the same base. That comparison is more instructive than any two sweet potato bottles picked at random, and it is the fastest way to understand why distillers talk about this room and not about the potato.
