A Japanese Craft Beer Rooted in Tea Tradition
There's an understated elegance in a properly poured saison, especially one infused with Sayama tea, one of Japan's most celebrated green teas. We're bringing the limited-edition Coedo Sayama Tea Saison to our tap list.
About the Brewery
Coedo Brewery is based in Kawagoe, Saitama, and has earned international recognition for blending traditional Japanese ingredients with modern brewing methods. After releases built around sweet potatoes, yuzu, and rice, this one puts tea front and center.
What's in the Glass
Pale and translucent gold, with an inviting herbal aroma. It's dry and crisp, with subtle bitterness and herbal complexity from the Sayama tea. Pairs especially well with fried dishes like karaage or our seasonal yuzu miso tofu.
Why It Matters
Sayama tea, grown in Saitama, has pronounced umami and vibrant green character. Paired with a saison's effervescent, dry qualities, it honors Japanese tea tradition while feeling completely current.
