Baladin Xyauyù Kioke — A Beer That Drinks Like a Port

Xyauyù Kioke is an Italian craft beer from Baladin, aged in large Japanese cedar barrels known as kioke.

Instead of keeping it bright and fresh, it's intentionally aged and exposed to slow oxidation: no carbonation, aged in cedar barrels, built to develop over time. This isn't about refreshment. It's about depth.

Why It's Different

Most beers are designed to be crisp and easy. This goes the other direction, slightly oxidative like fortified wine, fuller body with natural sweetness, meant for slow sipping. Think port or sherry, not IPA or lager.

Aroma: Dried fig, raisin, caramel, toasted wood

Taste: Rich malt, dark fruit, brown sugar, subtle cedar

Finish: Long, warm, slightly oxidative
