Baladin Xyauyù Kioke — A Beer That Drinks Like a Port
Xyauyù Kioke is an Italian craft beer from Baladin, aged in large Japanese cedar barrels known as kioke.
Instead of keeping it bright and fresh, it's intentionally aged and exposed to slow oxidation: no carbonation, aged in cedar barrels, built to develop over time. This isn't about refreshment. It's about depth.
Why It's Different
Most beers are designed to be crisp and easy. This goes the other direction, slightly oxidative like fortified wine, fuller body with natural sweetness, meant for slow sipping. Think port or sherry, not IPA or lager.
Flavor Profile
Aroma: Dried fig, raisin, caramel, toasted wood
Taste: Rich malt, dark fruit, brown sugar, subtle cedar
Finish: Long, warm, slightly oxidative
It leans into that dessert wine territory without losing structure.
How to Drink It
Take your time with it, lightly chilled or cellar temp, small pours, let it sit and open in the glass. This is something you sip, not rush.
Why We Brought It to Juraku
We like offering things that shift expectations a bit. Xyauyù Kioke does that immediately: not what people expect from "beer," a great conversation piece, something you don't see often. It fits the Juraku style of keeping things interesting.
Pair It With
Brown Butter Ramen, skirt steak yakitori, rich savory dishes. Or treat it like a dessert pairing.
