Yu Courage: The Bushido Virtue, in a Mizunara Cask
Yu (勇) is one of the virtues of bushido, the samurai code, and it's normally translated as courage.
The translation undersells it. In bushido, yu isn't simply the willingness to fight. It's heroic courage as a combination of things, valor, fortitude, awareness and perceptiveness. Knowing when to act is as much a part of it as being brave enough to.
Naming a whisky after it sets a fairly high bar.
The Whisky
Aged in mizunara casks, Japanese oak, and the reason to reach for this bottle.
Mizunara is scarce and awkward. The trees grow slowly and irregularly, the wood is porous enough that casks leak, and it needs longer than European or American oak before it stops giving raw tannin and starts giving what it's famous for.
What it's famous for is sandalwood, incense and coconut, an aromatic register no other oak provides.
What It Tastes Like
Nose and palate: Fruity and floral throughout, with honey, orange peel and white chocolate
Finish: Mellow, with a hint of oak
That's a gentler profile than mizunara sometimes produces. There's no heavy tannin here and no smoke. The Japanese oak shows as perfume rather than as weight, which makes this one of the easier ways into mizunara-aged whisky.
Where It Sits on Our Shelf
We now pour four whiskies where mizunara is central, and they use it four different ways:
Hibiki Harmony — mizunara as one of five casks in a blend.
Shinobu 10 — a mizunara finish on top of sherry, bourbon and hogshead malts.
Yamato Lady Tomoe — eight years fully in mizunara, on a grain-forward base.
Yu Courage — mizunara on a soft, fruit-led whisky.
Tasting across them is the clearest way to understand what the wood actually does, and it's a flight we're happy to build.
How to Drink It
Neat, room temperature, unhurried. Mizunara aromatics take a few minutes to open and are the first thing lost to ice.
Pair It With
Lighter than most whisky pairings. Handrolls, crispy rice, tebasaki, or on its own after dinner.
Try It at Juraku
Yu Courage is on the whisky list at Izakaya Juraku, Lower East Side, and available by the bottle.
