Mentaiko Mazemen at Izakaya Juraku: Kiyo's Ultimate Comfort Ramen

Mazemen is brothless ramen, instead of soup, all the flavor lives in the sauce that coats the noodles. Our version comes from a personal place for Chef Kiyo.

During his apprenticeship in Tokyo, Kiyo used to treat himself to mentaiko pasta whenever he could, which, on an apprentice's budget, wasn't often. That memory became the starting point for our Mentaiko Mazemen: ramen noodles tossed with butter, spicy mentaiko (cod roe), cream, and soy sauce, topped with shredded nori and fresh shiso.

It's comfort food with a story behind it, and we think that's exactly what makes it worth ordering.
