Inaka Sushi at Izakaya Juraku: Rustic, Seasonal, and Purely Japanese
Inaka sushi is countryside-style sushi, built around seasonal vegetables rather than raw fish. "Inaka" means countryside, and the style comes out of family-kitchen traditions from rural Japan.
What Is Inaka Sushi?
It's a vegetable-forward approach that draws on whatever's in season: pickled vegetables, simmered roots, foraged mountain plants, or seasonal mushrooms. We rotate our vegetable nigiri to match.
Right Now
We're currently featuring Eringi mushroom (king oyster), seared to bring out its umami and served over hand-formed sushi rice with soy. Past seasonal features have included shiso-marinated cucumber, grilled eggplant with miso glaze, pickled daikon, and roasted kabocha squash.
Why Try It
It's a vegetarian-friendly way into sushi, it shows off Japanese flavors beyond seafood, and it pairs nicely with sake or a light shochu.
