Baladin Fumé: A Smoked Italian Craft Beer with Deep Character at Izakaya Juraku
One of the more unusual beers on our menu is Baladin Fumé, a smoked beer from Italy's Baladin Brewery.
The Story Behind Baladin Fumé
Baladin Brewery was founded by Teo Musso in 1996 and has been one of the driving forces in Italy's craft beer scene ever since. Fumé is their smoked beer, made with traditional smoking methods and high-quality ingredients.
Fumé is aged in wooden barrels that previously housed whisky, allowing the beer to take on subtle hints of oak, peat, and caramelized malt. That aging process creates a deeply layered beer that balances smoke, sweetness, and earthiness.
Baladin Fumé's Unique Flavor Profile
- Style: smoked barrel-aged ale
- Aroma: rich notes of charred oak, caramel, and dark fruit
- Flavor: a balance of smoky malt, whisky warmth, and a touch of sweetness
- Mouthfeel: full-bodied and velvety, with a long, lingering smoky finish
- Pairing: grilled meats, umami-rich dishes, and aged cheeses
